  • In a large pot, bring water to a boil and add the cubed potatoes. Cook for 15-20 minutes or until tender. Drain the potatoes and return them to the pot.
  • Mash the potatoes with a potato masher or fork. Add the milk, butter, salt, and pepper, and continue mashing until smooth and creamy. Keep warm.
  • While the potatoes are cooking, heat a large skillet over medium heat. Add the spicy sausage links and cook for 12-15 minutes, turning occasionally, until browned and cooked through. Remove from the skillet and keep warm.
  • In the same skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, and sauté for 1-2 minutes until fragrant.
  • Add the fresh spinach to the skillet and cook for 3-5 minutes, stirring occasionally, until wilted. Season with salt and pepper to taste.
