Ingredients
- 1 pound spicy sausage
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 can diced tomatoes, drained
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish.
- In a large skillet, cook 1 pound of spicy sausage over medium heat until browned. Remove from the skillet and set aside.
- In the same skillet, add 1/2 cup chopped onion, 1/2 cup chopped green bell pepper, and 2 cloves of minced garlic. Cook until the vegetables are softened, about 5 minutes.
- Stir in 1 cup of long-grain white rice, 1 teaspoon paprika, 1/2 teaspoon dried oregano, and 1/2 teaspoon dried thyme. Cook for 1-2 minutes, stirring constantly.
- Pour in 2 cups of chicken broth and bring to a boil. Reduce the heat, cover, and simmer for 15 minutes, or until the rice is almost tender and the liquid is absorbed.
- Stir in the drained diced tomatoes and cooked spicy sausage. Season with salt and pepper to taste.
- Transfer the mixture to the prepared baking dish. Sprinkle 1 cup of shredded cheddar cheese and 1/2 cup of grated Parmesan cheese over the top.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
