Ingredients
- 1 lb spicy sausage, sliced
- 4 medium potatoes, diced
- 1 onion, chopped
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 2 green onions, chopped (for garnish)
Instructions
- In a large skillet, heat 1 tbsp of olive oil over medium-high heat.
- Add the sliced spicy sausage and cook for 5-7 minutes, or until browned. Remove from the skillet and set aside.
- In the same skillet, add the remaining 1 tbsp of olive oil and sauté the diced potatoes for 8-10 minutes, or until they are golden and crispy.
- Add the chopped onion, red bell pepper, and minced garlic to the skillet. Cook for an additional 3-4 minutes, or until the vegetables are tender.
- Return the cooked sausage to the skillet and sprinkle the paprika, cayenne pepper, salt, and black pepper over the mixture. Stir to combine and cook for another 2-3 minutes to allow the flavors to meld.
- Garnish with chopped green onions and serve hot.
