- 1/2 teaspoon of red pepper flakes
- 1/2 cup of chicken broth
- 1 can (14.5 ounces) of diced tomatoes
- 8 ounces of penne pasta
- Salt and pepper to taste
- Freshly grated Parmesan cheese for serving
Instructions
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
- Add the spicy Italian sausage, breaking it up with a spoon, and cook until browned and cooked through, about 5-7 minutes.
- Add the sliced red and yellow bell peppers, onion, minced garlic, and red pepper flakes to the skillet. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
- Stir in the chicken broth and diced tomatoes. Bring to a simmer and cook for 10 minutes, allowing the flavors to meld together. Season with salt and pepper to taste.
- While the sausage and peppers are simmering, cook the penne pasta according to the package instructions. Drain and set aside.
