Ingredients
- 1 whole chicken (about 4 pounds)
- 2 tablespoons of paprika
- 1 tablespoon of garlic powder
- 1 tablespoon of onion powder
- 1 tablespoon of cayenne pepper
- 1 tablespoon of dried thyme
- 1 tablespoon of salt
- 1 tablespoon of black pepper
- 2 tablespoons of olive oil
Instructions
- Preheat the oven to 375 degrees F.
- In a small bowl, mix together 2 tablespoons of paprika, 1 tablespoon of garlic powder, 1 tablespoon of onion powder, 1 tablespoon of cayenne pepper, 1 tablespoon of dried thyme, 1 tablespoon of salt, and 1 tablespoon of black pepper to create the spicy rub.
- Rub the spicy mixture all over the whole chicken, including under the skin and inside the cavity.
- Heat 2 tablespoons of olive oil in a Dutch oven over medium-high heat.
- Place the chicken in the Dutch oven and cook for 5-7 minutes on each side until browned.
- Cover the Dutch oven with a lid and transfer it to the preheated oven.
- Roast the chicken for 45-60 minutes, or until the internal temperature reaches 165 degrees F and the juices run clear when pierced between the leg and thigh.
- Remove the Dutch oven from the oven and let the chicken rest for 10 minutes before carving.
