Instructions

  • Preheat the oven to 375 degrees F.
  • In a small bowl, mix together 2 tablespoons of paprika, 1 tablespoon of garlic powder, 1 tablespoon of onion powder, 1 tablespoon of cayenne pepper, 1 tablespoon of dried thyme, 1 tablespoon of salt, and 1 tablespoon of black pepper to create the spicy rub.
  • Rub the spicy mixture all over the whole chicken, including under the skin and inside the cavity.
  • Heat 2 tablespoons of olive oil in a Dutch oven over medium-high heat.
  • Place the chicken in the Dutch oven and cook for 5-7 minutes on each side until browned.
  • Cover the Dutch oven with a lid and transfer it to the preheated oven.
  • Roast the chicken for 45-60 minutes, or until the internal temperature reaches 165 degrees F and the juices run clear when pierced between the leg and thigh.
