Chipotle Spicy Meatloaf

Ingredients
- 2 lbs ground beef
- 1 cup breadcrumbs
- 1/2 cup milk
- 2 eggs
- 1/2 cup onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup chipotle seasoning
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup ketchup
- 2 tbsp brown sugar
- 1 tbsp Worcestershire sauce
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine 2 lbs of ground beef, 1 cup of breadcrumbs, 1/2 cup of milk, 2 eggs, 1/2 cup of finely chopped onion, 2 cloves of minced garlic, 1/4 cup of chipotle seasoning, 1 tsp of salt, and 1/2 tsp of black pepper. Mix until well combined.
- Transfer the meat mixture to a greased loaf pan, shaping it into a loaf shape.
- In a small bowl, mix together 1/4 cup of ketchup, 2 tbsp of brown sugar, and 1 tbsp of Worcestershire sauce. Spread this mixture over the top of the meatloaf.
- Bake in the preheated oven for 1 hour, or until the meatloaf is cooked through and the top is caramelized.
- Allow the meatloaf to rest for 10 minutes before slicing and serving. Enjoy!
