Ingredients
- 1 cup of lentils
- 1 cup of basmati rice
- 2 cups of water
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 teaspoon of cumin
- 1 teaspoon of turmeric
- 1 teaspoon of paprika
- 1/2 teaspoon of cayenne pepper
- 1 cup of mixed vegetables (such as carrots, peas, and bell peppers)
- 2 tablespoons of olive oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Rinse 1 cup of lentils and 1 cup of basmati rice under cold water. Set aside.
- In a large pot, heat 2 tablespoons of olive oil over medium heat. Add 1 diced onion and cook until translucent.
- Add 2 cloves of minced garlic, 1 teaspoon of cumin, 1 teaspoon of turmeric, 1 teaspoon of paprika, and 1/2 teaspoon of cayenne pepper to the pot. Stir and cook for 1-2 minutes until fragrant.
- Add the rinsed lentils and rice to the pot, and stir to coat them with the spices and oil.
- Pour in 2 cups of water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 20 minutes.
- After 20 minutes, add 1 cup of mixed vegetables to the pot and stir to combine. Cover and continue to cook for an additional 10-15 minutes, or until the lentils and rice are tender and the vegetables are cooked through.
- Season with salt to taste and garnish with fresh cilantro before serving.
