Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon red pepper flakes
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Zest and juice of 1 lemon
- 4 cups mixed greens
Instructions
- In a large bowl, combine 2 tablespoons of olive oil, 2 cloves of minced garlic, 1 teaspoon of red pepper flakes, 1 teaspoon of paprika, 1 teaspoon of dried oregano, 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, and the zest and juice of 1 lemon.
- Add the peeled and deveined shrimp to the bowl and toss to coat evenly. Let the shrimp marinate for 10 minutes.
- Preheat the grill to medium-high heat. Thread the shrimp onto skewers, if desired, for easier grilling.
- Grill the shrimp for 2-3 minutes per side, or until they are pink and opaque. Remove from the grill and set aside.
- In a large bowl, toss 4 cups of mixed greens with a drizzle of olive oil and a squeeze of lemon juice.
- Divide the mixed greens among 4 plates and top each with an equal portion of the grilled shrimp.
