Ingredients
- 1 pound of shrimp, peeled and deveined
- 1 tablespoon of olive oil
- 1 onion, diced
- 1 green bell pepper, diced
- 2 celery stalks, diced
- 3 cloves of garlic, minced
- 1 can (14.5 oz) of diced tomatoes
- 1 cup of chicken broth
- 1 cup of long-grain white rice
- 2 teaspoons of Cajun seasoning
- 1 teaspoon of paprika
- 1/2 teaspoon of dried thyme
- 1/2 teaspoon of dried oregano
- 1/4 teaspoon of cayenne pepper
- Salt and pepper to taste
- 2 green onions, chopped (for garnish)
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet or Dutch oven, heat the olive oil over medium heat.
- Add the diced onion, bell pepper, and celery. Cook for 5 minutes, or until the vegetables are softened.
- Add the minced garlic and cook for an additional 1 minute.
- Stir in the diced tomatoes, chicken broth, rice, Cajun seasoning, paprika, thyme, oregano, and cayenne pepper.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20 minutes, or until the rice is almost tender.
- Stir in the peeled and deveined shrimp, and continue to cook for 5-7 minutes, or until the shrimp are pink and cooked through.
- Season with salt and pepper to taste.
- Garnish with chopped green onions and fresh parsley before serving.
