Ingredients
- 12 large mushrooms, stems removed and reserved
- 1 tablespoon olive oil
- 1/2 cup finely chopped onion
- 2 cloves garlic, minced
- 2 jalapeno peppers, seeded and finely chopped
- 8 ounces cream cheese, softened
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 cup bread crumbs
Instructions
- Preheat the oven to 375°F (190°C).
- Finely chop the mushroom stems.
- In a skillet, heat the olive oil over medium heat. Add the chopped mushroom stems, onion, garlic, and jalapeno peppers. Cook for 5 minutes, or until the vegetables are softened.
- In a mixing bowl, combine the cooked vegetable mixture with the softened cream cheese, Parmesan cheese, salt, black pepper, and paprika. Mix until well combined.
- Stuff each mushroom cap with the cream cheese filling and place them on a baking sheet.
- Sprinkle the stuffed mushrooms with bread crumbs.
- Bake in the preheated oven for 15-20 minutes, or until the mushrooms are tender and the filling is golden brown.
