Instructions

  • In a large bowl, whisk together 1 cup of flour, 1/2 cup of cornmeal, 1/4 cup of sugar, 1 tablespoon of baking powder, 1/2 teaspoon of salt, and 1/4 teaspoon of cayenne pepper.
  • Stir in 1 cup of shredded cheddar cheese and the finely chopped jalapenos.
  • In a separate bowl, whisk together 1 cup of milk and 2 eggs. Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Insert a wooden skewer into each hot dog, leaving enough exposed for a good grip. Dip each hot dog into the batter, making sure it's evenly coated.
  • In a large pot, heat 2 inches of vegetable oil to 375°F (190°C). Carefully place the battered hot dogs into the hot oil and fry until golden brown, about 3-4 minutes.
  • Remove the corn dogs from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot and enjoy!
