Instructions

  • Preheat the oven to 400°F (200°C).
  • Cut the pressed tofu into small cubes and place in a bowl.
  • In a small bowl, whisk together 1 tablespoon of olive oil, minced chipotle peppers, minced garlic, cumin, smoked paprika, chili powder, salt, and pepper.
  • Pour the chipotle marinade over the tofu cubes and toss to coat evenly. Let marinate for 10 minutes.
  • Spread the marinated tofu cubes on a baking sheet lined with parchment paper and bake for 15 minutes, or until crispy.
  • While the tofu is baking, heat the remaining 1 tablespoon of olive oil in a skillet over medium heat. Warm the corn tortillas for about 30 seconds on each side, then stack and wrap them in a clean kitchen towel to keep warm.
