  • 1/2 cup of diced tomatoes

  • 1/4 cup of chopped fresh cilantro
  • 1/2 cup of shredded cheddar cheese
  • 1/2 cup of shredded pepper jack cheese
  • 4 large flour tortillas
  • 1/4 cup of chipotle mayonnaise
  • 1 teaspoon of chili powder
  • 1/2 teaspoon of cumin
  • 1/2 teaspoon of garlic powder
  • Salt and pepper to taste

Instructions

  • In a large bowl, combine the cooked and shredded chicken, cooked rice, black beans, corn kernels, diced tomatoes, diced red onion, chopped cilantro, cheddar cheese, and pepper jack cheese.
  • Add the chili powder, cumin, garlic powder, salt, and pepper to the bowl and mix well to combine.
  • Lay out the flour tortillas and spread a tablespoon of chipotle mayonnaise on each tortilla.
  • Divide the chicken and vegetable mixture evenly among the tortillas, placing it in the center of each tortilla.
  • Fold the sides of the tortillas in and then roll them up tightly to form a wrap.
  • Heat a large skillet over medium heat and place the wraps seam-side down in the skillet.
  • Cook for 2-3 minutes on each side, or until the tortillas are golden brown and crispy and the cheese is melted.
  • Remove from the skillet and let cool for a few minutes before slicing in half and serving.
