Ingredients
- 1 lb of chicken breast, cooked and shredded
- 1/2 cup of chipotle mayonnaise
- 1/4 cup of diced red onion
- 1/4 cup of diced tomatoes
- 1/4 cup of diced green bell pepper
- 1/4 cup of canned corn, drained
- 1/4 cup of canned black beans, drained and rinsed
- 1 tsp of ground cumin
- 1 tsp of chili powder
- 1/2 tsp of garlic powder
- 1/2 tsp of salt
- 1/4 tsp of black pepper
- 4 large flour tortillas
- 2 ripe avocados, sliced
- 1 cup of shredded lettuce
- 1/2 cup of shredded cheddar cheese
Instructions
- In a large bowl, mix the shredded chicken with the chipotle mayonnaise, red onion, tomatoes, green bell pepper, corn, black beans, ground cumin, chili powder, garlic powder, salt, and black pepper.
- Lay out the flour tortillas and divide the chicken mixture evenly among them, spreading it out in the center of each tortilla.
- Top the chicken mixture with sliced avocado, shredded lettuce, and shredded cheddar cheese.
- Fold in the sides of the tortillas and then roll them up tightly to form wraps.
- If desired, heat a large skillet over medium heat and place the wraps seam-side down in the skillet. Cook for 2-3 minutes on each side until the tortillas are golden brown and crispy.
