  • 1 yellow bell pepper, sliced
  • 1 small zucchini, sliced
  • 1/2 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 2 tbsp olive oil
  • 1 tsp red pepper flakes
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

  • In a large skillet, heat 1 tbsp of olive oil over medium-high heat. Add the chicken pieces and cook until browned and cooked through. Remove from the skillet and set aside.
  • In the same skillet, add the remaining 1 tbsp of olive oil. Add the sliced bell peppers, zucchini, cherry tomatoes, and minced garlic. Cook for 5-7 minutes, or until the vegetables are tender-crisp.
  • Add the cooked chicken back to the skillet with the vegetables. Stir in the chicken broth, heavy cream, red pepper flakes, paprika, salt, and pepper. Cook for an additional 2-3 minutes, allowing the sauce to thicken slightly.
  • Add the cooked penne pasta to the skillet and toss to coat everything evenly with the sauce.
