  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese

  • 1/4 cup grated Parmesan cheese
  • Cooking spray

Instructions

  • Preheat the oven to 425°F (220°C).
  • In a bowl, toss the sweet potato fries with cornstarch, smoked paprika, garlic powder, onion powder, salt, pepper, and Parmesan cheese until evenly coated.
  • Spread the fries in a single layer on a baking sheet lined with parchment paper and lightly sprayed with cooking spray.
  • Bake for 20-25 minutes, flipping halfway through, until the fries are crispy and golden brown.
  • Meanwhile, in a small bowl, mix together the paprika, cayenne pepper, garlic powder, salt, and pepper. Rub the spice mixture onto both sides of the chicken breasts.
  • Heat the olive oil in a skillet over medium-high heat. Add the seasoned chicken breasts and cook for 6-7 minutes per side, or until cooked through and no longer pink in the center. Remove from the skillet and let rest for a few minutes before slicing.
  • Assemble the panini by layering the sliced avocado, cooked chicken, and pepper jack cheese between the slices of bread. Spread the outside of the sandwiches with butter.
