Ingredients
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 avocado, sliced
- 4 slices of bread
- 4 slices of pepper jack cheese
- 1 tablespoon butter
- 2 medium sweet potatoes, peeled and cut into fries
- 2 tablespoons cornstarch
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
- Cooking spray
Instructions
- Preheat the oven to 425°F (220°C).
- In a bowl, toss the sweet potato fries with cornstarch, smoked paprika, garlic powder, onion powder, salt, pepper, and Parmesan cheese until evenly coated.
- Spread the fries in a single layer on a baking sheet lined with parchment paper and lightly sprayed with cooking spray.
- Bake for 20-25 minutes, flipping halfway through, until the fries are crispy and golden brown.
- Meanwhile, in a small bowl, mix together the paprika, cayenne pepper, garlic powder, salt, and pepper. Rub the spice mixture onto both sides of the chicken breasts.
- Heat the olive oil in a skillet over medium-high heat. Add the seasoned chicken breasts and cook for 6-7 minutes per side, or until cooked through and no longer pink in the center. Remove from the skillet and let rest for a few minutes before slicing.
- Assemble the panini by layering the sliced avocado, cooked chicken, and pepper jack cheese between the slices of bread. Spread the outside of the sandwiches with butter.
- Heat a panini press or grill pan over medium heat. Place the sandwiches in the press or pan and cook for 3-4 minutes, or until the bread is golden brown and the cheese is melted.
