Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 1 1/2 cups cauliflower rice
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup chicken broth
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 2 green onions, chopped (for garnish)

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add the diced onion and minced garlic to the skillet and cook for 2-3 minutes until softened.
  • Stir in the diced red bell pepper and mixed vegetables, and cook for another 3-4 minutes.
  • Add the cauliflower rice, diced tomatoes, chicken broth, chili powder, cumin, paprika, cayenne pepper, salt, and pepper to the skillet. Stir to combine all the ingredients.
  • Simmer the mixture for 5-7 minutes, allowing the flavors to meld together.
  • Transfer the beef and vegetable mixture to a greased 9x13 inch casserole dish. Sprinkle the shredded cheddar cheese on top.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Garnish with chopped green onions before serving.
