Spicy Beef and Vegetable Cauliflower Rice Casserole

Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup mixed vegetables (carrots, peas, corn)
- 1 1/2 cups cauliflower rice
- 1 can (14 oz) diced tomatoes
- 1/2 cup chicken broth
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 2 green onions, chopped (for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the diced onion and minced garlic to the skillet and cook for 2-3 minutes until softened.
- Stir in the diced red bell pepper and mixed vegetables, and cook for another 3-4 minutes.
- Add the cauliflower rice, diced tomatoes, chicken broth, chili powder, cumin, paprika, cayenne pepper, salt, and pepper to the skillet. Stir to combine all the ingredients.
- Simmer the mixture for 5-7 minutes, allowing the flavors to meld together.
- Transfer the beef and vegetable mixture to a greased 9x13 inch casserole dish. Sprinkle the shredded cheddar cheese on top.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Garnish with chopped green onions before serving.
- Allow to cool for a few minutes before serving. Enjoy!
