Instructions

  • Cook the rice noodles according to package instructions. Drain and set aside.
  • In a wok or large skillet, heat 2 tbsp of vegetable oil over medium-high heat.
  • Add 3 cloves of minced garlic and 1 thinly sliced red chili. Stir-fry for 1 minute until fragrant.
  • Add 1 lb of thinly sliced chicken breast and cook until no longer pink, about 5-6 minutes.
  • Stir in the cooked rice noodles, 2 tbsp of soy sauce, 1 tbsp of oyster sauce, and 1 tsp of sugar. Toss to combine and heat through.
  • Remove the wok from the heat and stir in 1 cup of fresh basil leaves until wilted.
  • Divide the noodles among serving plates and sprinkle with 1/4 cup of chopped peanuts.
  • Serve with lime wedges for squeezing over the noodles. Enjoy!
