Spicy Basil Noodles

Ingredients
- 8 oz rice noodles
- 2 tbsp vegetable oil
- 3 cloves garlic, minced
- 1 red chili, thinly sliced
- 1 lb chicken breast, thinly sliced
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sugar
- 1 cup fresh basil leaves
- 1/4 cup chopped peanuts
- Lime wedges for serving
Instructions
- Cook the rice noodles according to package instructions. Drain and set aside.
- In a wok or large skillet, heat 2 tbsp of vegetable oil over medium-high heat.
- Add 3 cloves of minced garlic and 1 thinly sliced red chili. Stir-fry for 1 minute until fragrant.
- Add 1 lb of thinly sliced chicken breast and cook until no longer pink, about 5-6 minutes.
- Stir in the cooked rice noodles, 2 tbsp of soy sauce, 1 tbsp of oyster sauce, and 1 tsp of sugar. Toss to combine and heat through.
- Remove the wok from the heat and stir in 1 cup of fresh basil leaves until wilted.
- Divide the noodles among serving plates and sprinkle with 1/4 cup of chopped peanuts.
- Serve with lime wedges for squeezing over the noodles. Enjoy!
