Spicy Barbecue Grilled Kangaroo Steaks with Roasted Vegetables

Ingredients
- 4 kangaroo steaks (about 6 oz each)
- 1/2 cup barbecue sauce
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 teaspoon chili powder
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 2 cups mixed vegetables (bell peppers, zucchini, red onion, cherry tomatoes)
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon paprika
- Salt and pepper to taste
Instructions
- In a small bowl, mix together 1/2 cup barbecue sauce, 2 tablespoons soy sauce, 1 tablespoon honey, 1 teaspoon chili powder, 1/2 teaspoon cayenne pepper, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, and salt and pepper to taste. This will be the marinade for the kangaroo steaks.
- Place the kangaroo steaks in a shallow dish and pour the marinade over them, making sure they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
- Preheat the grill to medium-high heat. Remove the kangaroo steaks from the marinade and discard the excess marinade.
- Grill the kangaroo steaks for 3-4 minutes on each side for medium-rare, or longer to your desired doneness. Remove from the grill and let them rest for a few minutes before serving.
- While the kangaroo steaks are grilling, preheat the oven to 400°F (200°C).
- In a large bowl, toss 2 cups of mixed vegetables with 2 tablespoons of olive oil, 1 teaspoon dried thyme, 1 teaspoon dried rosemary, 1/2 teaspoon paprika, and salt and pepper to taste.
- Spread the seasoned vegetables on a baking sheet in a single layer and roast in the preheated oven for 15-20 minutes, or until they are tender and slightly caramelized.
- Serve the grilled kangaroo steaks with the roasted vegetables on the side. Enjoy!
