Instructions

  • In a large pot, heat 2 tablespoons of olive oil over medium heat.
  • Add the chopped onion and minced garlic, and sauté for 5 minutes until softened.
  • Stir in the diced sweet potatoes, vegetable broth, ground cumin, ground cinnamon, cayenne pepper, salt, and black pepper.
  • Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes, or until the sweet potatoes are tender.
  • Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth, then return to the pot.
  • Stir in the coconut milk and maple syrup, and let the soup simmer for an additional 5 minutes to heat through.
  • Taste and adjust seasoning if needed, then serve hot. Enjoy!
