Instructions

  • Rinse the red lentils under cold water and set aside.
  • In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  • Add the minced garlic, diced carrots, ground cumin, ground coriander, turmeric, and cayenne pepper to the pot. Cook for an additional 2 minutes, stirring frequently.
  • Pour in the vegetable broth and add the rinsed red lentils. Bring the soup to a boil, then reduce the heat to low and simmer for 30-35 minutes, or until the lentils and carrots are tender.
  • Season the soup with salt and pepper to taste.
  • Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth, then return to the pot.
  • Serve the spiced lentil and carrot soup hot, garnished with fresh cilantro. Enjoy!
