Ingredients
- 1 cup dried red lentils
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 large carrots, diced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- 6 cups vegetable broth
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Rinse the red lentils under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic, diced carrots, ground cumin, ground coriander, turmeric, and cayenne pepper to the pot. Cook for an additional 2 minutes, stirring frequently.
- Pour in the vegetable broth and add the rinsed red lentils. Bring the soup to a boil, then reduce the heat to low and simmer for 30-35 minutes, or until the lentils and carrots are tender.
- Season the soup with salt and pepper to taste.
- Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth, then return to the pot.
- Serve the spiced lentil and carrot soup hot, garnished with fresh cilantro. Enjoy!
