Instructions

  • In a large bowl, combine 3 cups of spelt flour, 1 packet of active dry yeast, and 1 teaspoon of salt.
  • In a separate bowl, mix 1 tablespoon of honey with 1 cup of warm water until the honey is dissolved.
  • Add the honey water mixture to the dry ingredients and stir to combine.
  • Knead the dough on a floured surface for 5-7 minutes, or until smooth and elastic.
  • Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour, or until doubled in size.
  • Preheat the oven to 375°F (190°C).
  • Punch down the dough and shape it into a loaf. Place the loaf on a greased baking sheet or in a greased loaf pan.
  • Brush the top of the loaf with 2 tablespoons of olive oil.
  • Bake for 30-35 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
  • Allow the bread to cool on a wire rack before slicing and serving.
