Instructions

  • Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Remove the sausage from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of olive oil. Add the broccolini and garlic, and sauté for 3-4 minutes until the broccolini is tender-crisp.
  • Pour in the chicken broth and bring to a simmer. Cook for an additional 2-3 minutes until the broccolini is tender and the liquid has reduced slightly.
  • Add the cooked spaghetti and browned sausage to the skillet. Toss everything together until well combined and heated through.
  • Season with salt and pepper to taste. Sprinkle with grated Parmesan cheese before serving.
  • Divide the spaghetti with sausage and broccolini among serving plates and enjoy!
