  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 1/2 cup soyaki sauce
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 1/2 cup sliced carrots
  • 1/2 cup sliced mushrooms
  • 3 cloves garlic, minced
  • 1 teaspoon grated ginger
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Instructions

  • In a bowl, marinate the chicken pieces in soyaki sauce for 10 minutes.
  • In a large skillet or wok, heat 1 tablespoon of vegetable oil over high heat.
  • Add the marinated chicken to the skillet and stir-fry for 5-6 minutes until cooked through. Remove the chicken from the skillet and set aside.
  • Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the garlic and ginger, and stir-fry for 1 minute.
  • Add the bell peppers, broccoli, snap peas, carrots, and mushrooms to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  • Return the cooked chicken to the skillet and toss everything together. Season with salt and pepper to taste.
  • Serve the soyaki chicken stir-fry over cooked rice or noodles. Enjoy!
