Ingredients
- 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
- 1/2 cup soyaki sauce
- 2 tablespoons vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 1/2 cup sliced carrots
- 1/2 cup sliced mushrooms
- 3 cloves garlic, minced
- 1 teaspoon grated ginger
- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions
- In a bowl, marinate the chicken pieces in soyaki sauce for 10 minutes.
- In a large skillet or wok, heat 1 tablespoon of vegetable oil over high heat.
- Add the marinated chicken to the skillet and stir-fry for 5-6 minutes until cooked through. Remove the chicken from the skillet and set aside.
- Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the garlic and ginger, and stir-fry for 1 minute.
- Add the bell peppers, broccoli, snap peas, carrots, and mushrooms to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Return the cooked chicken to the skillet and toss everything together. Season with salt and pepper to taste.
- Serve the soyaki chicken stir-fry over cooked rice or noodles. Enjoy!
