  • 1/4 cup of lemon juice
  • 3 cloves of garlic, minced
  • 1 teaspoon of dried oregano

  • 1/2 teaspoon of salt

  • 1 large red onion, cut into chunks
  • 2 large bell peppers (red, yellow, or green), cut into chunks
  • 4 pita bread rounds
  • Tzatziki sauce, for serving

  • 2 large bell peppers (red, yellow, or green), cut into chunks
  • 4 pita bread rounds

Instructions

  • In a large bowl, combine 1/4 cup of olive oil, 1/4 cup of lemon juice, 3 cloves of minced garlic, 1 teaspoon of dried oregano, 1/2 teaspoon of dried thyme, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  • Add the cubed chicken to the marinade, making sure it is well coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
  • Preheat the grill to medium-high heat.
  • Thread the marinated chicken, red onion, and bell peppers onto skewers, alternating the ingredients.
  • Grill the skewers for about 10 minutes, turning occasionally, until the chicken is cooked through and the vegetables are slightly charred.
  • While the skewers are grilling, warm the pita bread on the grill for about 1 minute on each side.
  • Serve the souvlaki skewers with warm pita bread and tzatziki sauce. Enjoy!
