Ingredients
- 1 lb chicken breast, diced
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cooked quinoa
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 2 avocados, sliced
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- 1/4 cup Greek yogurt
- 1/4 cup salsa
Instructions
- In a small bowl, mix together the cumin, chili powder, garlic powder, onion powder, salt, and black pepper.
- In a large skillet, heat the olive oil over medium-high heat. Add the diced chicken and sprinkle the spice mixture over the chicken. Cook for 5-7 minutes, or until the chicken is cooked through and slightly browned.
- In a separate bowl, combine the cooked quinoa, black beans, corn, cherry tomatoes, and red onion. Toss to mix well.
- Divide the quinoa mixture into 4 serving bowls. Top each bowl with the cooked chicken, sliced avocado, and chopped cilantro.
- In a small bowl, mix together the lime juice and Greek yogurt. Drizzle the lime yogurt sauce and salsa over the chicken bowls.
