Instructions

  • In a large bowl, combine 1 cup cooked chicken, 1/2 cup black beans, 1/2 cup corn kernels, 1/4 cup red bell pepper, 1/4 cup green onions, 1/2 cup shredded Monterey Jack cheese, 1 teaspoon chili powder, 1/2 teaspoon cumin, 1/2 teaspoon garlic powder, and salt and pepper to taste.
  • Place an egg roll wrapper on a clean surface with a corner pointed towards you. Spoon about 2-3 tablespoons of the chicken mixture onto the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides, and roll tightly. Use a dab of water to secure the tip of the wrapper. Repeat with the remaining wrappers and filling.
  • Heat vegetable oil in a large skillet over medium heat. Fry the egg rolls in batches until golden brown, about 2-3 minutes per side. Drain on paper towels.
  • To make the creamy avocado dipping sauce, in a blender or food processor, combine 1 ripe avocado, 1/4 cup sour cream, 1/4 cup mayonnaise, 1 clove minced garlic, 1 tablespoon lime juice, and salt and pepper to taste. Blend until smooth and creamy.
