Created by: Howcan Team
Ingredients
- 1 cup cooked chicken, shredded
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn kernels
- 1/4 cup red bell pepper, diced
- 1/4 cup green onions, chopped
- 1/2 cup shredded Monterey Jack cheese
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 12 egg roll wrappers
- Vegetable oil for frying
- 1 ripe avocado
- 1/4 cup sour cream
- 1/4 cup mayonnaise
- 1 clove garlic, minced
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine 1 cup cooked chicken, 1/2 cup black beans, 1/2 cup corn kernels, 1/4 cup red bell pepper, 1/4 cup green onions, 1/2 cup shredded Monterey Jack cheese, 1 teaspoon chili powder, 1/2 teaspoon cumin, 1/2 teaspoon garlic powder, and salt and pepper to taste.
- Place an egg roll wrapper on a clean surface with a corner pointed towards you. Spoon about 2-3 tablespoons of the chicken mixture onto the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides, and roll tightly. Use a dab of water to secure the tip of the wrapper. Repeat with the remaining wrappers and filling.
- Heat vegetable oil in a large skillet over medium heat. Fry the egg rolls in batches until golden brown, about 2-3 minutes per side. Drain on paper towels.
- To make the creamy avocado dipping sauce, in a blender or food processor, combine 1 ripe avocado, 1/4 cup sour cream, 1/4 cup mayonnaise, 1 clove minced garlic, 1 tablespoon lime juice, and salt and pepper to taste. Blend until smooth and creamy.
- Serve the Southwest egg rolls with the creamy avocado dipping sauce and enjoy!
The history of Southwest Egg Rolls dates back to the 1980s when they first appeared on the menu of a popular Tex-Mex restaurant in Texas. These crispy, flavorful appetizers quickly gained a cult following for their unique blend of Southwestern spices and ingredients. The creamy avocado dipping sauce, a modern twist on the traditional sour cream-based dip, adds a rich and tangy flavor that perfectly complements the spicy egg rolls. Today, the best versions of this dish can be found in Southwestern-inspired eateries across the United States, where chefs take pride in perfecting the balance of flavors and textures. To make this dish at home, it's crucial to get the filling just right, with a mix of chicken, black beans, corn, and spices, all wrapped in a crispy egg roll wrapper. Alternatively, some chefs opt for baking the egg rolls instead of deep-frying for a healthier twist.
