  • 1 can (15 oz) black beans, drained and rinsed
  • 1/2 cup bread crumbs
  • 1/4 cup red onion, finely chopped
  • 1/4 cup red bell pepper, finely chopped
  • 1/4 cup corn kernels
  • 1/4 cup cilantro, chopped
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup salsa
  • 4 burger buns
  • Toppings of your choice (lettuce, tomato, avocado, etc.)

  • 1/4 cup corn kernels
  • 1/4 cup cilantro, chopped
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup salsa
  • 4 burger buns
  • Toppings of your choice (lettuce, tomato, avocado, etc.)

Instructions

  • In a large bowl, mash 1 cup of the black beans with a fork or potato masher.
  • Add the remaining black beans, bread crumbs, red onion, red bell pepper, corn, cilantro, cumin, chili powder, garlic powder, salt, and black pepper to the bowl. Mix well to combine.
  • Divide the mixture into 4 equal portions and shape into burger patties.
  • Heat a non-stick skillet over medium heat and lightly coat with cooking spray or oil.
  • Cook the patties for 4-5 minutes on each side, or until they are heated through and have a nice crust on the outside.
  • Toast the burger buns in the skillet for 1-2 minutes, until lightly browned.
  • Assemble the burgers by spreading salsa on the bottom half of each bun, placing a black bean patty on top, and adding your choice of toppings.
  • Serve the Southwest Black Bean Burgers with your favorite side dish and enjoy!
