Southwest Black Bean Burger

Ingredients
- 1 can (15 oz) black beans, drained and rinsed
- 1/2 cup bread crumbs
- 1/4 cup red onion, finely chopped
- 1/4 cup red bell pepper, finely chopped
- 1/4 cup corn kernels
- 1/4 cup cilantro, chopped
- 1 tsp cumin
- 1/2 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup salsa
- 4 burger buns
- Toppings of your choice (lettuce, tomato, avocado, etc.)
Instructions
- In a large bowl, mash 1 cup of the black beans with a fork or potato masher.
- Add the remaining black beans, bread crumbs, red onion, red bell pepper, corn, cilantro, cumin, chili powder, garlic powder, salt, and black pepper to the bowl. Mix well to combine.
- Divide the mixture into 4 equal portions and shape into burger patties.
- Heat a non-stick skillet over medium heat and lightly coat with cooking spray or oil.
- Cook the patties for 4-5 minutes on each side, or until they are heated through and have a nice crust on the outside.
- Toast the burger buns in the skillet for 1-2 minutes, until lightly browned.
- Assemble the burgers by spreading salsa on the bottom half of each bun, placing a black bean patty on top, and adding your choice of toppings.
- Serve the Southwest Black Bean Burgers with your favorite side dish and enjoy!
