Ingredients
- 4 bone-in, skin-on chicken thighs
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon cayenne pepper
- Vegetable oil, for frying
- 2 cups of milk
- 2 tablespoons of all-purpose flour
- Salt and pepper to taste
- 4 large biscuits, store-bought or homemade
Instructions
- In a large bowl, combine the chicken thighs and buttermilk. Cover and refrigerate for at least 1 hour, or overnight for best results.
- In a shallow dish, mix together 1 cup of flour, 1 teaspoon of salt, 1 teaspoon of black pepper, 1 teaspoon of paprika, 1/2 teaspoon of garlic powder, 1/2 teaspoon of onion powder, and 1/4 teaspoon of cayenne pepper.
- Remove the chicken from the buttermilk, allowing any excess to drip off. Dredge the chicken in the seasoned flour mixture, pressing to adhere. Shake off any excess flour.
- In a large skillet, heat about 1 inch of vegetable oil over medium-high heat until it reaches 350°F (175°C). Carefully place the chicken thighs in the hot oil, skin side down. Fry for 6-8 minutes per side, or until golden brown and cooked through. Remove to a wire rack set over a baking sheet to drain and keep warm.
- While the chicken is frying, prepare the gravy. In a small saucepan, whisk together 2 tablespoons of flour and 2 cups of milk. Cook over medium heat, stirring constantly, until the gravy thickens. Season with salt and pepper to taste.
- Bake the biscuits according to the package instructions or recipe. Split the biscuits in half and place on serving plates.
