Instructions

  • In a large bowl, combine the chicken thighs and buttermilk. Cover and refrigerate for at least 1 hour, or overnight for best results.
  • In a shallow dish, mix together 1 cup of flour, 1 teaspoon of salt, 1 teaspoon of black pepper, 1 teaspoon of paprika, 1/2 teaspoon of garlic powder, 1/2 teaspoon of onion powder, and 1/4 teaspoon of cayenne pepper.
  • Remove the chicken from the buttermilk, allowing any excess to drip off. Dredge the chicken in the seasoned flour mixture, pressing to adhere. Shake off any excess flour.
  • In a large skillet, heat about 1 inch of vegetable oil over medium-high heat until it reaches 350°F (175°C). Carefully place the chicken thighs in the hot oil, skin side down. Fry for 6-8 minutes per side, or until golden brown and cooked through. Remove to a wire rack set over a baking sheet to drain and keep warm.
