Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons granulated sugar
- 1 tablespoon vegetable oil
- 3/4 cup warm water
- Vegetable oil for frying
- 1/4 cup powdered sugar
- 1 teaspoon ground cinnamon
Instructions
- In a large mixing bowl, combine 2 cups of all-purpose flour, 1 teaspoon of baking powder, 1/2 teaspoon of salt, and 2 tablespoons of granulated sugar.
- Add 1 tablespoon of vegetable oil and 3/4 cup of warm water to the dry ingredients. Mix until a dough forms.
- Turn the dough out onto a floured surface and knead for 5 minutes, then cover and let rest for 10 minutes.
- After resting, roll the dough out to 1/4 inch thickness and cut into 12 squares.
- Heat vegetable oil in a deep skillet or fryer to 375°F (190°C).
- Fry the sopapillas in the hot oil, turning once, until puffed and golden brown on both sides. This should take about 1-2 minutes per side.
- Remove the sopapillas from the oil and drain on paper towels.
- In a small bowl, mix 1/4 cup of powdered sugar and 1 teaspoon of ground cinnamon.
- Sprinkle the cinnamon sugar mixture over the sopapillas while they are still warm.
- Serve the sopapillas warm and enjoy!
