Instructions

  • Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • In a large bowl, cream together 1 cup of softened butter, 1 cup of granulated sugar, and 1/2 cup of packed brown sugar until light and fluffy.
  • Beat in 2 eggs, one at a time, then stir in 1 teaspoon of vanilla extract.
  • In a separate bowl, whisk together 2 1/4 cups of all-purpose flour, 1 teaspoon of baking soda, and 1/2 teaspoon of salt. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  • Place 1 cup of graham cracker crumbs in a small bowl. Scoop 2 tablespoons of cookie dough and flatten it into a disc. Place a marshmallow half and a few chocolate chips in the center, then fold the dough around the filling, rolling it into a ball. Roll the ball in the graham cracker crumbs until coated.
