Instructions

  • In a small bowl, mix together 1/2 cup of olive oil, 4 cloves of minced garlic, 2 tablespoons of chopped rosemary, 2 tablespoons of chopped thyme, 2 tablespoons of chopped sage, zest of 2 lemons, zest of 2 oranges, 1 tablespoon of salt, and 1 teaspoon of black pepper to create the citrus herb rub.
  • Preheat your smoker to 250°F (120°C).
  • Remove the giblets and neck from the turkey cavity and pat the turkey dry with paper towels.
  • Carefully loosen the skin from the turkey breast and legs by gently sliding your fingers underneath the skin, being careful not to tear it.
  • Rub the citrus herb mixture under the skin and all over the turkey, making sure to coat it evenly.
  • Place the turkey on the smoker rack and smoke for approximately 30 minutes per pound, or until the internal temperature of the thickest part of the turkey reaches 165°F (74°C). This will take about 4 hours for a 12-pound turkey.
  • Once the turkey is done, remove it from the smoker and let it rest for 20 minutes before carving.
  • Carve and serve the citrus herb smoked turkey with your favorite sides and enjoy!
