Instructions

  • In a non-stick skillet, melt 1 tablespoon of butter over medium heat.
  • Crack 4 large eggs into the skillet and cook to desired doneness, either scrambled or sunny-side up.
  • Season the eggs with salt and pepper to taste.
  • While the eggs are cooking, place 2 slices of smoked salmon on each plate.
  • Once the eggs are done, carefully transfer 2 eggs onto each plate on top of the smoked salmon.
  • Garnish with chopped chives and serve immediately.
