Ingredients
- 5-6 lbs pork shoulder
- 1/4 cup brown sugar
- 2 tbsp paprika
- 2 tbsp garlic powder
- 2 tbsp onion powder
- 2 tbsp cumin
- 2 tbsp chili powder
- 1 tbsp cayenne pepper
- 1 tbsp salt
- 1 tbsp black pepper
- 2 cups spicy BBQ sauce
- 8-10 hamburger buns
- Pickles and coleslaw for serving
Instructions
- In a small bowl, mix together 1/4 cup brown sugar, 2 tbsp paprika, 2 tbsp garlic powder, 2 tbsp onion powder, 2 tbsp cumin, 2 tbsp chili powder, 1 tbsp cayenne pepper, 1 tbsp salt, and 1 tbsp black pepper to create the dry rub.
- Rub the dry rub all over the pork shoulder, covering it completely. Let it sit in the refrigerator for at least 4 hours, or preferably overnight.
- Prepare your smoker for cooking, bringing the temperature to 225-250°F. Add your favorite smoking wood chips or chunks to the smoker.
- Place the pork shoulder in the smoker and cook for 6-8 hours, or until the internal temperature reaches 195°F. Remove from the smoker and let it rest for 30 minutes.
- Using two forks, shred the smoked pork shoulder into bite-sized pieces and place in a large bowl.
- Pour 2 cups of spicy BBQ sauce over the pulled pork and mix until the pork is evenly coated.
- Toast the hamburger buns on a grill or in the oven until lightly golden brown.
- Assemble the pulled pork sandwiches by placing a generous amount of the spicy pulled pork on the bottom half of each bun. Top with pickles and coleslaw, if desired.
