  • 2 tablespoons water

Instructions

  • In a small bowl, mix together 1 teaspoon salt, 1/2 teaspoon black pepper, 1 teaspoon garlic powder, 1 teaspoon paprika, 1/2 teaspoon dried thyme, 1/2 teaspoon dried oregano, and 1/4 teaspoon cayenne pepper.
  • Rub the spice mixture all over the chicken thighs.
  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Brown the chicken thighs on both sides, about 3-4 minutes per side.
  • Place the sliced onion and minced garlic in the bottom of the slow cooker. Place the browned chicken thighs on top.
  • Pour 1 cup of chicken broth over the chicken thighs.
  • Cover and cook on low for 4 hours, or until the chicken is tender and cooked through.
  • In a small bowl, mix together 2 tablespoons of cornstarch and 2 tablespoons of water to create a slurry. Stir the slurry into the slow cooker to thicken the sauce. Cook for an additional 15 minutes.
  • Garnish with fresh parsley before serving. Enjoy!
