Instructions

  • Place the chicken thighs in the bottom of the slow cooker.
  • Add the quinoa, diced onion, minced garlic, and diced red bell pepper on top of the chicken.
  • In a separate bowl, mix together the diced tomatoes, chicken broth, paprika, cumin, dried oregano, salt, and pepper. Pour this mixture over the ingredients in the slow cooker.
  • Cover and cook on low for 4 hours, or until the chicken is tender and the quinoa is cooked through.
  • Once done, remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker and mix well with the quinoa and vegetables.
  • Serve the slow cooker chicken and quinoa garnished with fresh parsley. Enjoy!
