Slow Cooker Beef Chili

Ingredients
- 1.5 lbs of beef stew meat, cubed
- 1 onion, chopped
- 1 green bell pepper, chopped
- 3 cloves of garlic, minced
- 1 can (14.5 oz) of diced tomatoes
- 1 can (15 oz) of kidney beans, drained and rinsed
- 1 can (15 oz) of black beans, drained and rinsed
- 1 can (6 oz) of tomato paste
- 2 cups of beef broth
- 2 tablespoons of chili powder
- 1 tablespoon of cumin
- 1 teaspoon of paprika
- 1 teaspoon of oregano
- 1/2 teaspoon of cayenne pepper
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, chopped green onions
Instructions
- In a large skillet, brown the beef stew meat over medium-high heat for 5-7 minutes. Transfer the browned meat to the slow cooker.
- In the same skillet, sauté the chopped onion, green bell pepper, and minced garlic for 3-4 minutes until softened. Transfer the sautéed vegetables to the slow cooker.
- Add the diced tomatoes, kidney beans, black beans, tomato paste, beef broth, chili powder, cumin, paprika, oregano, cayenne pepper, salt, and pepper to the slow cooker. Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and the flavors have melded together.
- Taste and adjust seasoning if needed. Serve the beef chili hot, topped with shredded cheese, sour cream, and chopped green onions if desired.
