Garlic Mashed Potatoes

Ingredients
- 2 pounds of potatoes, peeled and cubed
- 4 cloves of garlic, minced
- 1/2 cup of milk
- 1/4 cup of butter
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Place the potatoes in a large pot and cover with water. Bring to a boil and cook for 15-20 minutes, or until the potatoes are tender.
- While the potatoes are cooking, melt the butter in a small saucepan over medium heat. Add the minced garlic and cook for 1-2 minutes, until fragrant. Remove from heat and set aside.
- Drain the cooked potatoes and return them to the pot. Mash the potatoes with a potato masher or fork until smooth.
- Pour the garlic butter mixture and milk into the mashed potatoes. Stir until well combined and creamy. Season with salt and pepper to taste.
- Transfer the mashed potatoes to a serving dish and garnish with chopped fresh parsley. Serve hot alongside pot roast.
