Spicy Shrimp Stir Fry

Ingredients
- 1 pound of shrimp, peeled and deveined
- 2 tablespoons of vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup of snap peas
- 3 cloves of garlic, minced
- 1 tablespoon of fresh ginger, grated
- 1/4 cup of soy sauce
- 2 tablespoons of chili garlic sauce
- 1 tablespoon of honey
- 1 tablespoon of cornstarch
- 1/4 cup of water
- Cooked rice, for serving
- Sesame seeds and green onions, for garnish
Instructions
- In a small bowl, whisk together 1/4 cup of water and 1 tablespoon of cornstarch until smooth. Set aside.
- In another bowl, mix 1/4 cup of soy sauce, 2 tablespoons of chili garlic sauce, and 1 tablespoon of honey. Set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat.
- Add the shrimp and stir-fry for 2-3 minutes until pink and opaque. Remove the shrimp from the skillet and set aside.
- Add the remaining 1 tablespoon of vegetable oil to the skillet. Stir in the minced garlic and grated ginger, and cook for 1 minute until fragrant.
- Add the sliced red and yellow bell peppers, and snap peas to the skillet. Stir-fry for 2-3 minutes until the vegetables are tender-crisp.
- Return the cooked shrimp to the skillet. Pour the soy sauce and chili garlic sauce mixture over the shrimp and vegetables. Stir to coat everything evenly.
- Give the cornstarch mixture a quick stir and then pour it into the skillet. Cook for 1-2 minutes, stirring constantly, until the sauce thickens.
- Remove the skillet from the heat and serve the spicy shrimp stir fry over cooked rice.
- Garnish with sesame seeds and sliced green onions before serving.
