Shrimp and Broccoli Stir-Fry

Ingredients
- 1 pound of large shrimp, peeled and deveined
- 2 cups of broccoli florets
- 1 red bell pepper, sliced
- 3 cloves of garlic, minced
- 1 tablespoon of ginger, minced
- 1/4 cup of low-sodium soy sauce
- 2 tablespoons of oyster sauce
- 1 tablespoon of cornstarch
- 2 tablespoons of vegetable oil
- 1 teaspoon of sesame oil
- 1/4 teaspoon of red pepper flakes
- 2 green onions, sliced
- Cooked rice, for serving
Instructions
- In a small bowl, whisk together 1/4 cup of soy sauce, 2 tablespoons of oyster sauce, and 1 tablespoon of cornstarch. Set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and stir-fry for 2-3 minutes, or until pink and opaque. Remove the shrimp from the skillet and set aside.
- Add the remaining 1 tablespoon of vegetable oil to the skillet. Stir in 3 cloves of minced garlic, 1 tablespoon of minced ginger, and 1/4 teaspoon of red pepper flakes. Cook for 1 minute, or until fragrant.
- Add 2 cups of broccoli florets and sliced red bell pepper to the skillet. Stir-fry for 3-4 minutes, or until the vegetables are tender-crisp.
- Return the cooked shrimp to the skillet. Pour the soy sauce mixture over the shrimp and vegetables. Cook, stirring constantly, for 1-2 minutes, or until the sauce has thickened and everything is heated through.
- Drizzle 1 teaspoon of sesame oil over the stir-fry and toss to combine. Remove from heat.
- Serve the shrimp and broccoli stir-fry over cooked rice, garnished with sliced green onions. Enjoy!
