Shredded Beef and Cheese Arepas with Black Beans

Ingredients
- 1 cup pre-cooked shredded beef
- 1 cup shredded mozzarella cheese
- 2 cups pre-cooked cornmeal
- 1 1/2 cups warm water
- 1/2 teaspoon salt
- 2 tablespoons vegetable oil
- 1 can black beans, drained and rinsed
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- In a large bowl, mix the pre-cooked shredded beef and shredded mozzarella cheese. Set aside.
- In a separate bowl, combine the pre-cooked cornmeal, warm water, and salt. Knead the mixture until a smooth dough forms.
- Divide the dough into 8 equal portions and shape each into a ball. Flatten each ball to form a patty about 1/2 inch thick.
- Heat the vegetable oil in a skillet over medium heat. Cook the arepas for 5-6 minutes on each side, or until golden brown and crispy. Remove from the skillet and set aside.
- In the same skillet, add the drained and rinsed black beans. Season with cumin, paprika, garlic powder, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until the beans are heated through and well seasoned.
- Slice each arepa in half horizontally, without cutting all the way through. Stuff each arepa with the shredded beef and cheese mixture.
- Serve the stuffed arepas with the seasoned black beans on the side. Enjoy!
