Ingredients
- 1 1/2 pounds ground beef
- 1 onion, chopped
- 2 carrots, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/4 cup all-purpose flour
- 1 cup beef broth
- 1 cup frozen peas
- 4 cups mashed sweet potatoes
- 1/2 cup grated cheddar cheese
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the chopped onion, diced carrots, minced garlic, dried thyme, and dried rosemary to the skillet. Cook for 5-7 minutes, or until the vegetables are tender.
- Sprinkle the flour over the beef and vegetable mixture, and stir to combine. Cook for 1-2 minutes.
- Gradually pour in the beef broth, stirring constantly. Bring to a simmer and cook for 5 minutes, or until the mixture has thickened. Season with salt and pepper to taste.
- Stir in the frozen peas, then transfer the mixture to a 9x13 inch baking dish and spread it out evenly.
- In a separate bowl, mix together the mashed sweet potatoes and butter. Season with salt and pepper to taste.
- Spread the sweet potato mixture over the beef and vegetable filling in the baking dish, smoothing it out with a spatula.
- Sprinkle the grated cheddar cheese over the top of the sweet potato layer.
- Bake in the preheated oven for 25-30 minutes, or until the filling is bubbling and the sweet potato topping is lightly golden.
