Ingredients
- 1 1/2 pounds ground beef
- 1 onion, chopped
- 2 carrots, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/4 cup all-purpose flour
- 1 cup beef broth
- 1 cup frozen peas
- 4 cups mashed potatoes
- 1/2 cup shredded cheddar cheese
Instructions
- Preheat the oven to 375 degrees F.
- In a large skillet, cook 1 1/2 pounds of ground beef and 1 chopped onion over medium heat until the meat is no longer pink. Drain any excess fat.
- Add 2 diced carrots, 2 minced garlic cloves, 1 teaspoon of dried thyme, and 1 teaspoon of dried rosemary to the skillet. Cook for 5 minutes, stirring occasionally.
- Sprinkle 1/4 cup of all-purpose flour over the meat mixture and stir to combine. Cook for 1 minute.
- Pour in 1 cup of beef broth and bring to a simmer. Cook for 5 minutes, or until the mixture has thickened.
- Stir in 1 cup of frozen peas and cook for an additional 2 minutes.
- Transfer the meat and vegetable mixture to a 9x13 inch baking dish and spread it out evenly.
- Spread 4 cups of mashed potatoes over the meat mixture, smoothing it out with a spatula.
- Sprinkle 1/2 cup of shredded cheddar cheese over the mashed potatoes.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the filling is bubbling around the edges.
- Allow the shepherd's pie to cool for 10 minutes before serving. Enjoy!
