Sesame Ginger Tofu Stir-Fry

Ingredients
- 1 block of extra firm tofu, pressed and cubed
- 2 tablespoons of cornstarch
- 1/4 cup of soy sauce
- 2 tablespoons of rice vinegar
- 2 tablespoons of honey
- 1 tablespoon of sesame oil
- 1 tablespoon of grated ginger
- 2 cloves of garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup of broccoli florets
- 2 green onions, chopped
- 2 tablespoons of sesame seeds
- Cooked rice or noodles for serving
Instructions
- In a small bowl, whisk together 2 tablespoons of cornstarch, 1/4 cup of soy sauce, 2 tablespoons of rice vinegar, 2 tablespoons of honey, 1 tablespoon of sesame oil, grated ginger, and minced garlic. Set aside.
- Heat a large skillet or wok over medium-high heat. Add the cubed tofu and cook until golden and crispy, about 5-7 minutes. Remove the tofu from the skillet and set aside.
- In the same skillet, add the sliced bell peppers and broccoli. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Return the crispy tofu to the skillet with the vegetables. Pour the sesame ginger sauce over the tofu and vegetables. Stir well to coat everything in the sauce and cook for an additional 2-3 minutes.
- Sprinkle with chopped green onions and sesame seeds. Serve the sesame ginger tofu stir-fry over cooked rice or noodles. Enjoy!
