  • 1 tbsp vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup snap peas
  • 1 cup broccoli florets

Instructions

  • In a small bowl, whisk together 1/4 cup soy sauce, 2 tbsp honey, 2 tbsp sesame oil, 2 tbsp rice vinegar, grated ginger, and minced garlic to make the sesame ginger glaze.
  • Season the salmon fillets with salt and pepper, then brush the glaze over the top of each fillet. Sprinkle sesame seeds over the glaze and set aside.
  • Heat 1 tbsp of vegetable oil in a large skillet over medium-high heat. Add the sliced red and yellow bell peppers, snap peas, and broccoli florets. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  • Push the vegetables to the side of the skillet and add the seasoned salmon fillets, glaze side down. Cook for 3-4 minutes, then flip the fillets and cook for an additional 3-4 minutes until the salmon is cooked through and the glaze is caramelized.
  • Garnish the stir-fried vegetables and salmon with chopped green onions and serve hot.
