Ingredients
- 1 lb boneless, skinless chicken breast, thinly sliced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch
- 1/4 cup chicken broth
- 2 tablespoons vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup snap peas
- 3 green onions, sliced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons sesame seeds
- Cooked rice, for serving
Instructions
- In a small bowl, mix 1 tablespoon of soy sauce, 1 tablespoon of sesame oil, and 1 tablespoon of cornstarch. Add the sliced chicken and toss to coat. Let it marinate for 10 minutes.
- In another small bowl, whisk together the remaining 1 tablespoon of soy sauce and 1/4 cup of chicken broth. Set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Add the marinated chicken and stir-fry for 3-4 minutes, or until cooked through. Remove the chicken from the skillet and set aside.
- Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the sliced bell peppers, snap peas, green onions, garlic, and ginger. Stir-fry for 2-3 minutes, or until the vegetables are crisp-tender.
- Return the cooked chicken to the skillet. Pour the soy sauce and chicken broth mixture over the chicken and vegetables. Stir-fry for an additional 1-2 minutes, or until the sauce thickens slightly and coats the chicken and vegetables.
- Sprinkle the sesame seeds over the stir-fry and toss to combine.
- Serve the sesame ginger chicken stir-fry over cooked rice and enjoy!
