Creamy Garlic Seitan Chicken Marsala

Ingredients
- 1 pound of seitan, sliced into cutlets
- 1/2 cup of all-purpose flour
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 2 tablespoons of olive oil
- 8 ounces of mushrooms, sliced
- 1/2 cup of Marsala wine
- 1/2 cup of vegetable broth
- 1/2 cup of unsweetened almond milk
- 4 cloves of garlic, minced
- 2 tablespoons of vegan butter
- 2 tablespoons of chopped fresh parsley
- Salt and pepper to taste
Instructions
- In a shallow dish, combine 1/2 cup of flour, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Dredge the seitan cutlets in the flour mixture, shaking off any excess.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
- Add the seitan cutlets and cook until golden brown, about 3-4 minutes per side. Remove from the skillet and set aside.
- In the same skillet, add the sliced mushrooms and cook until they release their liquid and become golden brown, about 5 minutes.
- Add the minced garlic and cook for an additional 1-2 minutes, until fragrant.
- Pour in the Marsala wine and vegetable broth, scraping up any browned bits from the bottom of the skillet.
- Simmer for 5 minutes to reduce the liquid slightly.
- Stir in the unsweetened almond milk and vegan butter, and cook for another 2-3 minutes until the sauce thickens.
- Season with salt and pepper to taste.
- Return the seitan cutlets to the skillet, spooning the creamy garlic sauce over the top.
- Simmer for an additional 2-3 minutes to heat the seitan through.
- Garnish with chopped fresh parsley before serving.
