  • Dredge the seitan cutlets in the flour mixture, shaking off any excess.
  • In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
  • Add the seitan cutlets and cook until golden brown, about 3-4 minutes per side. Remove from the skillet and set aside.
  • In the same skillet, add the sliced mushrooms and cook until they release their liquid and become golden brown, about 5 minutes.
  • Add the minced garlic and cook for an additional 1-2 minutes, until fragrant.
  • Pour in the Marsala wine and vegetable broth, scraping up any browned bits from the bottom of the skillet.
  • Simmer for 5 minutes to reduce the liquid slightly.
  • Stir in the unsweetened almond milk and vegan butter, and cook for another 2-3 minutes until the sauce thickens.
  • Season with salt and pepper to taste.
  • Return the seitan cutlets to the skillet, spooning the creamy garlic sauce over the top.
  • Simmer for an additional 2-3 minutes to heat the seitan through.
  • Garnish with chopped fresh parsley before serving.
