Ingredients
- 1 cup of seitan, sliced
- 1 baguette, cut into 4 equal pieces
- 1/2 cup of rice vinegar
- 1/4 cup of sugar
- 1/2 cup of water
- 1/2 teaspoon of salt
- 1 cup of julienned daikon radish
- 1 cup of julienned carrots
- 1/4 cup of soy sauce
- 2 tablespoons of hoisin sauce
- 1 tablespoon of sesame oil
- 1 tablespoon of vegetable oil
- 1 teaspoon of minced garlic
- 1 teaspoon of minced ginger
- 1 jalapeno, thinly sliced
- 1/2 cup of fresh cilantro leaves
- 1/4 cup of mayonnaise
- 1 tablespoon of sriracha sauce
Instructions
- In a small saucepan, combine 1/2 cup of rice vinegar, 1/4 cup of sugar, 1/2 cup of water, and 1/2 teaspoon of salt. Bring to a boil, then remove from heat and let it cool for 5 minutes.
- Place the julienned daikon radish and carrots in a glass jar or bowl, and pour the vinegar mixture over them. Let it sit at room temperature for at least 30 minutes before using.
- In a small bowl, mix 1/4 cup of soy sauce, 2 tablespoons of hoisin sauce, 1 tablespoon of sesame oil, 1 teaspoon of minced garlic, and 1 teaspoon of minced ginger. Add the sliced seitan and let it marinate for 15 minutes.
- Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add the marinated seitan and cook for 3-4 minutes on each side, until browned and crispy.
- Slice the baguette pieces in half lengthwise, and spread mayonnaise on one side and sriracha sauce on the other side.
- Layer the cooked seitan, pickled daikon and carrots, jalapeno slices, and fresh cilantro leaves on the baguette. Close the sandwich and serve immediately.
