Instructions

  • Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • In a large bowl, whisk together 2 cups of flour, 1 tablespoon of baking powder, and 1/2 teaspoon of salt.
  • Add the cubed cold butter to the flour mixture and use a pastry cutter or fork to cut the butter into the flour until it resembles coarse crumbs.
  • In a separate bowl, mix together 1/4 cup of maple syrup and 3/4 cup of milk. Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together. Pat the dough into a 1-inch thick round and use a biscuit cutter to cut out 8 biscuits. Place the biscuits on the prepared baking sheet and bake for 12-15 minutes, or until golden brown.
  • While the biscuits are baking, cook the breakfast sausage in a skillet over medium heat, breaking it apart with a spatula as it cooks, until browned and cooked through. Remove from the skillet and set aside.
  • In the same skillet, crack the eggs and cook to your desired doneness, seasoning with salt and pepper.
  • To assemble the sandwiches, split the baked biscuits in half. Place a cooked sausage patty on the bottom half of each biscuit, followed by a cooked egg and a sprinkle of shredded cheddar cheese. Top with the other half of the biscuit.
