Sausage and Vegetable Rice Casserole

Ingredients
- 1 lb sausage, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup frozen peas
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1/2 cup shredded cheddar cheese
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the sliced sausage over medium heat until browned. Remove from the skillet and set aside.
- In the same skillet, add the chopped onion and cook until softened. Add the minced garlic, bell pepper, and zucchini, and cook for another 3-4 minutes.
- Stir in the frozen peas, long-grain rice, chicken broth, dried thyme, paprika, salt, and pepper. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes.
- Transfer the rice mixture to a greased 9x13 inch casserole dish. Arrange the cooked sausage on top and sprinkle with shredded cheddar cheese.
- Cover the casserole dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
- Let the casserole cool for a few minutes before serving. Enjoy!
